Your Step-by-Step Guide to Meal Plan like a Pro

By Christina Howard

We’ve all been there – waking up late with no time to prepare a healthy lunch so we succumb to afternoon temptation like those tasty donuts in the break room or processed school lunches. Banish the Monday blues and look forward to lunch by prepping a week’s worth of healthy meals for you and your family in advance! Follow our foolproof guide below and you’ll be prepping like a pro in no time.

1. Start with the right hardware

Before you begin your meal prep for the week, pick out some fancy mason jars or bento boxes. You’ll be encouraged to use your snazzy new containers all week long! We love to prep salads for the week in these jars (dressing on the bottom, lettuce on top!) for a foolproof, quick and healthy lunch. Bento boxes are also a cute alternative to the lunch box – suitable for adults and kids alike!

2. Pick your protein

Whether you’re a hardcore meat-lover or a veggie goddess, everyone needs protein! Grilled chicken, skirt steak in a red wine reduction, or seasoned cuts of salmon are great by themselves or on top of a fresh salad. For some great vegan lunch options, check out this video from Mind over Munch. Tofu, falafel, or gourmet almond butter and jelly are great vegan options.

3. Load up the veggies

It should come as no surprise that many Americans don’t get their recommended number of fruits and vegetable throughout the day. Make sure you and your kids are eating healthy by packing plenty of fresh fruits and vegetable in your box! Compartmentalized boxes are great because you can give yourself several different options, in case you’re just not feeling baby carrots for a third day in a row. Bonus points if you can turn your kid’s food into adorable creations, like the boxes below.

4. Repeat

As the old adage goes, practice makes perfect, so practice your meal prep often! Grabbing a quick and healthy lunch should become a habit, so you’re never tempted to choose less than ideal lunchtime cuisine. Pick a day and time to set aside for meal prep. For example: while you’re cooking dinner Sunday night, cook a little extra and set it aside. After dinner, assemble all your boxes for the week. That way, all you have to do is grab and go in the morning!
